whole wheat apple muffins

Awhile back I mentioned that I wanted to bake these muffins from Smitten Kitchen. I found the recipe last fall and thought they looked oh-so-delicious. Well, last night my mom and I were at the grocery store (along with just about everyone else in the northeast) and I had the idea to buy some apples to make these muffins, since I knew we'd be snowed in this morning. So we bought a few gala apples and this morning we had a delicious breakfast of whole wheat apple muffins, grapefruit, and tea while watching the snow fall. It was delightful.

And the muffins are really delicious. They're moist and not too sweet at all and they have lots of cinnamon. Just the way I like 'em. Yum!

Whole Wheat Apple Muffins
Yields 18

1 cup whole wheat flour
1 cup all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon cinnamon
1/2 cup (1 stick) unsalted butter, at room temperature
1/2 cup granulated sugar
1/4 cup dark brown sugar, packed
1 large egg, lightly beaten
1 cup buttermilk or yogurt (I used buttermilk)
2 large apples, peeled, cored, and diced
Cinnamon sugar

1. Preheat the oven to 450. Grease and flour 18 muffin cups and set aside.

2. Mix together the flours, baking powder, baking soda, salt, and cinnamon, and set aside. In a separate bowl, cream the butter and add the granulated sugar and brown sugar. Beat until fluffy. Add the egg and mix well; stop once to scrape the sides and bottom of the bowl. Mix in the buttermilk gently. (If you over-mix, the buttermilk will cause the mixture to curdle.) Stir in the dry ingredients and gently fold in the apple chunks.

3. Divide the batter evenly among the prepared muffin cups. Sprinkle cinnamon sugar on the tops of the muffins. Bake for 10 minutes, then turn the heat down to 400, and bake for an additional 5-10 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool the muffins in the tin for 5 minutes and then turn them out on a wire wrack to cool completely.

The snow is still coming down and we already have around two feet. But there is something fun about being snowed in...and warm muffins and tea with your mom make it all more the enchanting.

  1. Thanks for the yummy-lookin' recipe! I'm printing it out and hopefully will try it soon. And have fun being snowed in. I especially like the first muffin picture and the last one (the napkin really adds to it)!

  3. I made lemon ricotta pancakes from Smitten Kitchen this morning and they were delicious, as well! :) Baking while snowed in certainly feels cozy.
